Let’s take you back to the old days. What is your first memory relating to food?
That must be the waffles my gran made. She had them rest on straw for a night before handing them out to us, her grand-kids. No fast food in those days!
How long have you been working in the restaurant-business?
I founded Cachet de Cire in 1996.
Which wine do you prefer to drink yourself?
That would be a Sauvignon Blanc from New-Zealand.
What can we always find in your home fridge?
Gluten-free pancake mix and a bottle of Vermouth.
Which country is still on your bucket list?
Down Under – Australia.
Who is your favourite musician?
Luke Walter Jr. from Blue Blot, who died much too young.
What do you lack the time for?
I’d love to have more time to read and to take my dog Zadar, a Lagotto-Romagnolo, out on long walks. And golf. Definitely. I’d love to be able to play golf more often.
What is your dream holiday destination?
Without any doubt: South-Africa. Its grand nature and its no-nonsense cuisine make it ideal for my kind of holiday.
A bit of a weird question, this one, but… what would you wish to eat as your last supper?
I’d go for a starter with veal sweetbread followed by chicken with applesause and fresh fries as a main course.
Last but not least: what is your one-time only, absolute guilty pleasure ?
Mocha ice-cream and Graham’s 20yr Tawny !

Let’s take a trip down memory lane. What is your first memory relating to food?
Oooh... frog legs. As a kid I found them yummy. And I have been told that as a kid I’d eat pizza every day when on holiday in Italy.
How long have you been working in the catering business?
After graduating my studies of Communication Management in 1993 I briefly worked in Villars-sur-Ollon (Switzerland) at the hotel Le Bristol (****). After that I managed an Italian restaurant in Bruges for three years. I worked for a few years in the temporary employment sector and was a relationship manager at Delta Lloyd bank for 10 years before eventually returning to my first love in 2009: the catering business. I have been chef at Cachet de Cire ever since.
Which wine do you prefer to drink yourself?
That’s a tough one to answer. I’m afraid I’m a bit of a novelty seeker. Recently I drank a German wine – a Domina based wine from the Weingut Christine Proestler. Truly magnificent that was.
What can we always find in your home fridge?
Cola zero, cheese, fresh fruit …
Which country is still on your bucket list?
Brazil
Who is your favourite author?
I love relaxing with Mike Gayle’s chick lit.
What do you lack the time for?
I’d love to train for and run a marathon. But I’d also like to have more time just to read and play tennis and golf.
Which is your ideal holiday destination?
I feel privileged whenever I get to travel. Naturally, food is important to me and because of that Thailand and South Africa are at the top of my list.

I would like to eat dinner with my family and friends … and share some comfort food and excellent wines.
Last but not least:what is your one-time only, absolute guilty pleasure?
Piece of cake. I tend to open a Graham’s Vintage Port. Simply the best.
